Sustainability is a big thing in today’s modern world with global temperatures rising by the year. Le Matin Patisserie at ION Orchard is playing its part by crafting 4 tantalising renditions of its Croissant Amazake Soft Serve.

le matin - cafe front

If you’re guessing what it’s derived from, it actually makes use of leftover croissants and trimmings— these poor little buggers are finally not wasted and thrown away for nothing, yayers!

Adopting the same processes used in Japanese amazake (drink made from fermented rice), the kōji-fermented croissants produces the sweet dessert. We watched as one of the charming Le Matin Patisserie staffs demonstrated the assembling of the Croissant Amazake Soft Serve with Croissant Cone (S$12).

After she piped the soft serve artfully onto the croissant cone, she dusted it with roasted kōji, croissant flakes and sea salt before jabbing a cute toasted croissant chip by the side.

The soft serve reminded us of 3 things concurrently: salted caramel, soya sauce and salted Horlicks. It’s hard to describe its multi-dimensional flavour— you’ll have to taste it to find out. I loved it anyway!

The Croissant Amazake Soft Serve with Brown Butter Waffles (S$20) was our top pick of that day at Le Matin Pattiserie. It featured quirky heart-shaped waffles which gave off a tummy-churning aroma that won us over even before we tucked into them. They were the vessel to smear or dip the soft serve with. Delicious!

Do note that this particular variation is only available on their dessert menu from Wednesdays to Sundays from 6pm – 9pm only.

If you’re a serious coffee drinker, you should try the Affogato (S$11) which uses a special double espresso blend crafted by Nylon Coffee Roasters. The aromatic cup of Joe is then poured over the soft serve. There’s also the Croissant Amazake Soft Serve (Cup) (S$7).

We also enjoyed 2 of their savoury pastries after all that sweet indulgence. The Lamb & Red Wine Pie (pictured left) (S$15) and the Escargot Escargot (S$13).

If you’re someone who is terrified of the gamey taste of lamb, I’m glad to report that this had zero traces of it. The flaky puff pastry is filled with a lamb stew that’s braised for 8 hours with red wine and lamb jus, and it had a generous topping of chervil sprinkled with rosemary salt.

The Escargot Escargot is made of a sourdough croissant encasing a filling consisting of chopped snails, mushroom ricotta custard, chimichurri, parsley and fragrant garlic crumbs.
