Just launched last week, Alley on 25 at Andaz Singapore now offers free-flow of handcrafted pizzas and Andaz Pilsners every Tuesday from 6pm to 8pm at just S$39++ per person. The delicious pilsners are brewed exclusively in collaboration with local microbrewery Trouble Brewing, renowned in the scene of Singaporean craft beers.

Over the night, diners can pick from a variety of five different pizzas—Margherita, Mushroom, Quattro Formaggi, Capricciosa, and a spicy Diavola.

The Diavola pizza is a classic blend of tomato sauce and spicy salami, a dependable yet delicious combination. It could’ve used just a touch of contrast, in my opinion, and even just adding onions into the mix would’ve done wonders for the Diavola.

Capricciosa

The Mushroom pizza is a combination of tomato sauce, mozzarella cheese, button mushroom, and shimeji mushroom. It’s a blend that works, but definitely would’ve been elevated with some arugula or brussels sprouts.

I was earnestly holding on to the hope that a cream-based pizza would be available somewhere on the menu, so the Quattro Formaggi is probably the closest thing that’s not tomato-based. In sum, it’s a four-cheese pizza comprising of parmesan, mozzarella, blue cheese, and taleggio. This was my favourite of the night, and easily devoured more than half the pizza.

Another classic, the Margherita pizza presents roma tomato, buffalo mozzarella, and basil leaves. Again, it’s perfectly average and delivers exactly what it promises.

Switch things up with the Capricciosa pizza, topped with tomato sauce, ham, wild mushroom, artichoke, and olive. This was probably the pizza with the most complex flavours, so you know what to go for if you’re looking for a party in your mouth.

The pizzas at Alley on 25 are made with high-grade double zero flour from Italy, and undergo at least 24 hours of dough proofing. The Italian staples are cooked in Alley on 25’s signature green Beech Oven, adapted with bricks and baking stones to cook the pizzas evenly at 300°C.

At an additional top of S$10++ each, two desserts—the Berry Tiramisu or Flowy Rose Cake—are available to close your night off on a saccharine note.
