If you’re a fan of desserts and bakes, you might want to check BUNDT by The Backyard Bakers out.

Growing increasingly popular in a matter of weeks, this snack and brunch takeaway kiosk is a cousin of the cafe GRAZE by The Backyard Bakers

A cosy tight space can be seen at first glance, and it seems that this hole-in-the-wall store mainly entertains takeaways. Housing up to at most eight people, there are only two small tables and four high chairs surrounding each. What I noticed about this tiny shop was the delightful aroma of freshly-baked brownies I had picked up when I was approaching the store. Sinful as it may be, it whetted my appetite for a nice, hearty brunch.

The small space doesn’t deter the hungry CBD office workers though, and the snaking queues vouch for it. It was quite a comical sight to see lines of people battling Singapore’s unforgiving weather just to get their breakfast fix at this tiny space.

BUNDT by The Backyard Bakers was started by two sisters and their passion for baking. Selling their bakes from the backyard of their home in 2017 met with a ton of success, which was when they decided to spread the love to more people in the CBD area.

If you look closely enough while you’re ordering your delicious treats, you might be able to peer into their kitchen and witness where the magic happens. With a limited workspace, you’re able to catch a glimpse of their entire working area just by standing at the cashier. Needless to say, it was cosy and if I were working there, I’d feel right at home.

I decided to begin my day with the MaLa Smoked Salmon Avocado Sourdough (S$16.50). A beautiful blend of creamy avocado on top of sourdough bread, the two ingredients paired well with the fresh smoked salmon and grilled cherry tomatoes.

There was also an onsen egg sitting atop the entire dish, and it was satisfying to watch the yolk trickle down to add a more intense flavour to the rest of the components of the sourdough. To add that spicy kick, mala powder was sprinkled on the egg and salmon.

Having the creamy mashed avocado with the sweet cherry tomato and the yolk of the onsen egg was phenomenal. The normally bland avocado complemented the sweetness and savouriness of the other components beautifully.

Upon tucking into the smoked salmon, I immediately detected the strong numbing sensation of mala from the mala powder. If you’re not one to take spice with your food, fret not—BUNDT by The Backyard Bakers offers a plethora of non-spicy options to go with their scrumptious sourdough.

However, if you’ve got a low tolerance for spicy food but still want to enjoy this dish, this is still a pretty safe choice for you. It was equivalent to xiao la in terms of mala xiang guo in my opinion, so this is a dish many can chomp down on.

Sourdough made for an amazing carb to go with this meal. It was tough to grasp the flavours of the sourdough because of the intense mala flavour overpowering it, but the texture was out of this world. The sourdough also complemented the intense mala taste with its chewy bite that’s topped with a crisp crust.

I’ve always loved brownies, so when two of my friends recommended trying out the brownies at BUNDT by The Backyard Bakers, I knew I had to give it a shot. I decided to get the Nutella Hazelnut Brownie (S$5.20) to satisfy my chocolate cravings.

Baked to perfection, the square-shaped brownie came in a rich, dark shade and was topped with three pieces of hazelnut. Because hazelnut is a key flavour in Nutella, it enhanced the flavour of this delectable snack.

The contents of the brownie featured a generous amount of my favourite spread, with the chewy and nutty goodness enveloped by the delicious bake. With a chewier consistency than usual, this was different from the other brownies I’ve tried in my life—it was less porous than usual,  and had a “wetter” texture.

If you prefer your brownies soft, you should definitely check this out—the richness of the chocolate was impeccable.

The Peanut Butter Brownie (S$4.80) may look the same as the Nutella Hazelnut Brownie, but trust me, the filling makes a world of a difference. I came to realise all the brownies are in the same colour and shape, which meant that the brownie batter remained unchanged, and the only difference was the toppings and fillings.

Sprinkled with peanuts this time, I can’t help but notice the same aroma of fudge and vanilla wafting from the Peanut Butter Brownie.

As expected, the centre of the brownie was filled with peanut butter—yet another undeniably delicious bread spread. Pleasantly gooey and thick, the peanut butter really brought back memories for me. Growing up, I was always greeted with a peanut butter sandwich when I got home from school, so tasting this brownie was really nostalgic.

BUNDT by The Backyard Bakers doesn’t have a physical menu as of now, so you’ll have to visit their profile on Instagram to get their menu of the day. Yes, their menu changes every day, and that’s what makes the place so unique!

I definitely see why BUNDT by The Backyard Bakers is all the rage right now—I was very impressed by their bakes after all. I’m planning a return visit to BUNDT by The Backyard Bakers; what about you?
