Jypsy One Fullerton: New location, laid-back vibe, fantastic view & creative contemporary Japanese food

With its bohemian vibe and artsy handmade décor, Jypsy really does personify the carefree gypsy spirit. Sitting as it does on Marina Bay at One Fullerton, the pleasant water views add to the laid-back character. I don’t know what gypsies actually eat but they are unfortunate if it’s nothing like the contemporary Japanese cuisine you find here.

This restaurant is the new flagship outlet after the Jypsy on Martin Road closed. It features many of the crowd favourites that made that establishment such a hit.

One of those dishes is Nest of Fires (S$14) which is crispy shredded potato and white truffle oil served with teriyaki balsamic sauce and wasabi mayo. It is served in a tower that I suppose resembles a bird’s nest but forget the presentation, it is super delicious! The sauce was so good (which is probably why I thought there was too little of it).

You also have to try the Jypsy Salmon Tacos (S$16). Each serving comes with 2 seaweed tortillas filled with slices of salmon, ikura (red caviar), avocado and tomato salsa, and wasabi mayo. Creative design aside, this light snack has an imaginative mouthfeel as well.

popcorn shrimp

Spicy Popcorn Shrimp (S$16) rounded up the trio of old faves. Served with chilli ponzu mayo, this is the perfect side snack. You can taste the freshness of the shrimp with each bite but I wish they would add more of the crispy exterior because it was really well flavoured.

We also tried a couple of new dishes on Jypsy’s Small Plates menu, the Melty Smokey Nasu (S$12) and Bluefin & Chitose Crudo (S$25). Nasu is a traditional Japanese dish of eggplant halves covered in a miso caramel glaze. For a vegetarian dish, it was a stunner. Served with semi-dried tomatoes and a hot basil ponzu, the crudo of raw Bluefin was refreshing.

From the Big Plates menu, we were served the Robata Lamb Ribs (S$28). The minto, shisho and garlic verde were the perfect accompaniment and made for a more interesting mouthful than appearances let on.

The Tiramisu Soft Serve (S12) was my choice of dessert. Here, it came topped with a dollop of vanilla ice cream and swimming in a bed of rum. I am always partial towards tiramisu and I give it full points here, too.

I was a fan of the original Martin Road Jypsy and I am happy to see it grow wings to fly again at what I think is a location much better suited to its food and atmosphere. I’m afraid you’ll see me chilling and stuffing myself here more often than I should. Join me!
