Spanning 2-storeys with a refined and modern ambience, the restaurant is conveniently located a hop and a skip away from Telok Ayer MRT Station and Lau Pa Sat.

With its main dining hall and 5 special VIP rooms (accommodates up to 20 pax), planning intimate family gatherings, business lunches or even casual day-to-day meals has never been easier! For those who drive, there’s even complimentary Valet Parking available from 6pm to 10pm for a hassle-free dinner session.

Now’s the perfect time to pop in —  they’ve just rolled out a host of new dishes that I haven’t been able to stop thinking about all weekend. Fresh offerings that highlight the natural flavours of Teochew and Cantonese cuisine are introduced regularly, often in line with the seasons.

What to order at Pure Gem

We dived right into their new dishes. First up was the Marinated Red Cream Mud Crab 生腌红膏蟹 (S$16 per 100g), winning us over with its punchy flavours. It’s amazing how the gravy topped with fresh coriander stalks and chillies matched so well with the pieces of marinated raw crab.

Whether you prefer the pincers or legs, each piece is gloriously crowned with rich, luscious roe that delivers a smooth indulgent finish. The flesh is plump, naturally sweet, and bursting with umami-ness.

When the Steamed Marble Goby with Yellow Bell Pepper 黄椒酱蒸笋壳鱼 (S$15 per 100g) arrived, we were intrigued and questioned, “Where’s the body?”

The common reason why many avoid whole fish dishes (me included) is because of the hassle of picking around the bones. That won’t happen here as the chefs at Pure Gem have thoughtfully removed the bones, leaving behind neatly-portioned fish pieces garnished with yellow lantern chilli sauce that look like a salsa of sorts.

Our friendly server drizzled the soy-based sauce all around the fish, leaving a gorgeous brown pool of gravy at the bottom.

The yellow bell pepper was vibrant and tangy, with a ‘hidden’ surprise — a lingering spicy punch at the end. When eaten with the savoury sauce beneath, the combination was sheer brilliance! I’ll be honest — I ended up polishing off half the plate.

When the claypot cover of the Double-Boiled Pig’s Stomach Soup with Kampung Chicken and Conpoy 干贝猪肚土鸡汤 (S$108 for 4 pax) was lifted, I caught whiffs of peppery goodness as the soup was vigorously bubbling.

We watched in awe as the server took out the bulging pork stomach that was topped with dried scallops. He then carefully dissected it cleanly with a pair of scissors.

Inside sat a whole kampong chicken, which he deftly sliced — stomach and all —  into bite-sized pieces before ladling in the broth.

The soup was a delight to savour slowly — comforting, rich and peppery, yet never cloying. The chicken was nice and tender while the pig’s stomach was delicious.

We also savoured (and loved) another crustacean dish — the Wine Marinated Yellow Roe Crab 熟醉黄膏蟹 (S$16 per 100g). With just a dash of Chinese wine, the fragrance enhanced the natural sweetness of the crab. There was also a lot of roe embedded in the flesh, making it extra indulgent.

The Stir-Fried Iberico Pork with Lettuce in Shrimp Paste 虾酱黑豚肉油麦菜 (S$38) was served sizzling hot in a claypot.

After giving it a little toss, the pieces of pork and lettuce were enveloped in a shiny coating, which we soon discovered was the shrimp paste sauce. It added a savoury, almost belacan-like taste to the pieces of unctuous pork and crunchy lettuce. There were also hidden sliced chilli padi that gave it some fiery heat.

This dish is a real dark horse — modest in appearance, yet an absolute showstopper!
