Who doesn’t love a good high tea sesh, especially after a long and tiring work week? Sipping tea and nibbling on dainty pastries is one of the best ways to unwind.
If you like the finer things in life, treat yourself to the indulgent SKAI High Tea (S$60++ per adult, S$30++ per child) for an Insta-worthy afternoon—and we’re not just talking about the view from 70 floors up.
For someone like me with an undeniable sweet tooth and a soft spot for afternoon tea, the opportunity to dine at SKAI’s high tea was definitely a dream come true. This menu is a collaboration between Executive Chef Paul Hallet’s culinary philosophy focusing on quality produce, and Executive Pastry Chef Ming Choong’s 20 years of pastry experience.
To start the session off, we got to choose the tea pairing from the selection of fine tea blends. Curated by TWG tea specialists, we could choose from the newly-introduced Chocolate Mint Truffle, Emperor Pu-Erh and White Sky Tea. If you’re feeling fancy, you can also consider the Red Robe Tea (add-on of S$5) or White Immortal Tea (add-on of S$10).
I went with the classic French Earl Grey, while my dining companion opted for the lighter Emperor Sencha.
Even just the cutlery and crockery really impressed me—I particularly loved the watercolour wash of sea-foam green on the silver-rimmed cups.
Consisting of three tiers, the tea set was presented on a delicate stand that’s intricately designed to resemble a Japanese cherry blossom tree. The bottom tier held four savoury treats, while sweet creations sat on the top two. The high tea set also came with Baked Scones on the side, which I was really excited to dig into.
I’d recommend going for the scones first—and not just because I’m partial to them. Served freshly-baked and piping hot, it’s best to enjoy these fluffy, crumbly treats while warm.
One of the scones was plain, while the other was dotted with dried fruits. I personally preferred the plain one better, as it provided a tasting canvas for the strawberry jam and Devonshire cream which I slathered on generously.
I’m a bit picky when it comes to eating order, so I had to tackle the savoury treats first. Six scrumptious snacks awaited me: Asparagus Feta Quiche, Lobster Roll, Foie Gras Polo Bun, Maitake Truffle on Flatbread, Smoked Salmon Sandwich and Egg & Truffle on Brioche.
Of the lot, my favourite had to be the Lobster Roll. Though it’s a mini version, SKAI was quite generous with the lobster meat, which was juicy, oceanic and fresh. The ikura added briny pops of flavour, while the celery bits surprised me with herbaceous crunch.
After easily demolishing the savoury snacks, I moved on to the two tiers of sweet treats. This was a dessert lover’s heaven—the delicate desserts ran the gamut from sweet, to tart, to simply unique flavours.
Take your pick from classics with a twist, like the Raspberry Cream Cheese Macaron, Sugarless Dark Chocolate Bonbon and 72% Chocolate Sable Tart. Get a taste of something more unique with Candied Black Bean Sesame, Matcha Tea Mascarpone, Mango & Strawberry Gateau and Cocoa Bean Ruby Chantilly.
I absolutely loved the 72% Chocolate Sable Tart, which consists of a base of caramelised hazelnuts with a homemade marmalade centre for tartness. It’s topped with crunchy cocoa crumble and speckled with gold flakes. Truly decadent!
The Cocoa Bean Ruby Chantilly and Raspberry Cream Cheese Macaron are noteworthy too, created from the rose-hued ruby chocolate. The hint of fruitiness is easily detectable in these two desserts.
At S$60++ per pax, this might be slightly pricey but trust me, it’s more than satisfying. In fact, I was struggling a teensy bit with the sweets because I was just so stuffed.
While it’s not a treat I can indulge in on a regular basis, it was worth the experience. Stunning view, delicate desserts and an impeccable tea pairing—it has all the makings of a great date spot!
