Hokkien mee lovers, who’s ready to check out this brand-new name in Geylang? Umami (乌妈咪) officially opened its first physical stall on 18 Jul, dishing out hearty plates of Hokkien mee with a distinct umami bomb. Located at 709 Geylang Road, this hawker upstart is already turning heads, and not just for its cheeky name.

Prior to settling down in Geylang, you might’ve spotted Umami at its pop-up booth at GastroBeats 2025. With a Gen Z-attuned brand and bold, wok hei-laden flavours, they were quick to capture the hearts (and stomachs) of hungry attendees. Now, they’re bringing that same energy to a hawker stall of their own, and finally, not only for a limited time.
Behind Umami is Alvin, a former software engineer who took a sharp turn from tech to tongs. After allegedly trying every Hokkien mee in Singapore, he decided to throw his wok into the ring, spending nearly 6 months alpha testing his recipe. The result immortalises itself as the 20th rendition of his Hokkien mee recipe, now proudly plated at Umami.

The star of the show (the only competitor, in fact) is undoubtedly their Hokkien Mee (S$6/S$8).
Alvin’s version leans creamy and indulgent. The noodles are bathed in a rich, prawn-forward broth that’s thick, and of course, umami-laden, all without relying on MSG. Diners have praised its balance — not too wet, not too dry — with each strand of noodle thoroughly soaked in the savoury goodness.
Fresh prawns and tender squid top each plate, while crispy pork lard adds crunch and depth. With the addition of a satisfyingly spicy sambal, this plate feels both comforting and elevated, with thoughtful attention to detail in every bite.
The best part? Umami opens from 6pm to 12am (closed on Thu), making it a convenient fix for dinner, post-work bites, or even late-night Hokkien mee cravings.
