“The best Hokkien Mee in Singapore” reopens in Redhill after sudden closure

False alarm! Touted as “the best Hokkien Mee in Singapore”, Uncle Peter Hokkien Mee will not be closing, but relocating to Lengkok Bahru.

First announcing his store’s closure on 10 May due to a lack of manpower and customers, Uncle Peter revealed a week later that he found a new location.

Surprise surprise. It is slated to open on 20 or 21 May.

Good news! The newly-reopened Uncle Peter Hokkien Mee is a 5-minute walk from Redhill MRT. Definitely much more accessible than his former store at Woodlands Industrial Park.

According to Uncle Peter, he has also received customers from Punggol and Bukit Panjang back at Woodlands.

Why travel across Singapore for a plate of hokkien mee?

As an ex-chef from the acclaimed Bedok Corner Hokkien Mee, Uncle Peter believes that the cornerstone of every dish is a combination of the freshest ingredients. Using either sua lor or ang kar prawns that have a subtle brininess and sweetness respectively, his prawns are wild-caught and imported straight from the fishery!

Of course, his old-school mee steals the show.

Although it is not charcoal-fried, the hokkien mee has “sufficient wok hei” as it is made with quality noodles that yield a charred taste without burning quickly.

Take it from a reviewer who described that all ingredients were “cooked just right”.

Uncle Peter also adjusts the texture of his old-school hokkien mee depending on his customers’ preferences. If not, he serves it semi-dry, which accentuates the noodle’s flavour through the light moisture of the prawn stock.

Unfortunately, as Uncle Peter is running a one-man business, his store will only sell his signature hokkien mee for the time being.

Fret not, there is not much of a price increase from the original stall.

The Signature Prawn Hokkien Mee (S$5.50/S$6.50) features 3 pieces of fresh prawns, tender pork belly slices and plump sotong nestled on a generous portion of yellow al dente egg noodles.

If you are craving something different, get to lala-land with the Signature Fried Hokkien Mee with Lala (S$8.50/S$10.50)! Similar to the other versions of Uncle Peter’s hokkien mee, the molluscy dish is served with a satisfying topping of crispy pork lard.

For the hearty eaters, his Signature Big Prawn Hokkien Mee (S$18.50) is perfect! Testament to Uncle Peter taking pride in providing the very best for customers, news of his hokkien mee store’s reopening was met with much excitement and a lot of buzz.

Nevertheless, the question remains: Is this truly “the best Hokkien Mee in Singapore?”
