Running for over 40 years, Hiong Kee Dumplings at Hong Lim Market & Food Centre has been painstakingly crafting their range of sweet and savoury bak zhang in-house. Don’t be confused when you spot 2 Hiong Kee Dumplings stalls — the first floor is the kitchen where you can spot the team stuffing and wrapping the rice dumplings.

Head up to the second floor and take your pick from 8 different choices such as the Chicken, Mushroom, Chestnut (S$4.80), and Belly Pork Dumpling (S$5.50).

Located in the heart of Hougang, Peng Catering Services Restaurant is a three-generation Teochew family restaurant that began operations in 1982. Though its main focus has always been its dine-in restaurant, it pivoted to making and selling Nyonya bak zhang as a seasonal offering during the COVID-19 pandemic in 2021.

Never did they expect to receive an overwhelming wave of support from their regulars who loved the rice dumplings to bits. Following that success, they made the rice dumplings an annual tradition — prompting many regular diners to grab a few to take home right after a hearty meal at the restaurant.

Launched in 2020 during the COVID-19 pandemic, Mama Felicious is a home-based business by Mdm Felicia—hence the name ‘Felicious’, a playful nod to her name. Previously, her bak zhang creations were only meant for the consumption of her family and friends.

Born and bred in Perak, Malaysia, Mdm Felicia was brought up in the kampong where she learnt how to wrap rice dumplings from her ah ma at the age of 10. As she grew up, she met a Singaporean man who swept her off her feet, and she gradually adapted the recipe to suit local tastes. Every year as the Dragon Boat Festival approaches, she finds herself missing her grandmother a little more, as bak zhang reminds her of her granny.

Expect opulent, seasonal ingredients such as Iberico pork, karasumi, crab meat, just to name a few. This year, the kitchen team introduces a duo of brand-new creations and I was excited to give them a try.

One of my favourites was the new White Pepper Crab with Scallop & Brazilian Mushroom Rice Dumpling (S$25). Dried shrimp is expected, but seafood in bak zhang? Now that’s something new! Glutinous rice is filled with premium crab meat, juicy scallops, and premium Brazilian mushrooms,  all drenched in a smooth white pepper sauce.

Another surprise was the new Cantonese Style Honey-Glazed Pork Char Siew Rice Dumpling (S$18). This reimagined local classic infuses spring onion into its glutinous rice, before stuffing it with tender pork char siew, Hong Kong liver sausage, salted egg yolk, red beans, and braised maltose soy beans for a nutty hint.

For something unique, savour the South African Abalone with Karasumi & Iberico Pork (S$28) with salted mullet roe for an umami punch. There’s also the Signature Pork & Salted Egg (S$19) and the vegetarian Cordycep Flower & Purple Glutinous Rice (S$18)

Started by Fazlin and her husband, you might’ve spotted Muslim-owned The Han’s Dumplings SG at various booths and mini fairs at a heartland shopping mall around your neighbourhood. The brand was originally setup by Fazlin’s brother-in-law, Han, but due to personal issues, he had to migrate to Australia. The couple have taken over the reins for the home-based business.

Take your pick from 5 kinds of kueh chang. Non-spice lovers can relish in the Chicken (S$5.50 for 1 pc, S$14 for 3 pcs), Beef (S$6 for 1pc, S$16 for 3 pcs), and Nyonya (S$6 for 1 pc, S$16 for 3 pc).
