Yes, welcome back to your usual scheduled programming—Ariel gushes about yet another dessert she’s tried and fell head over heels in love with. Introducing Amuse Dessert Co., opened by the folks behind The Dark Gallery.

a selection of cake and pastries

If The Dark Gallery reminds you of Wednesday Addams, then Amuse Dessert Co. is best represented by Vanellope Von Schweetz from Wreck It Ralph. Here’s a fun fact: I adore both girls equally as much.

affogato

Sugar and caffeine might not be the most stomach-friendly combination, but they sure as hell get on together like a house on fire. Amuse Dessert Co.’s Affogato (S$10.50) was the first thing I tried, and if my mama allowed me to have ice cream with my morning coffee, it’s goodbye espresso, hello affogato for me forever. The affogato is served with two shots of Allpress Espresso, and a scoop of creamy vanilla ice cream atop chocolate soil. Make sure you eat their House Biscotti first and revel in the unfailing combination of fragrant coffee, crispy textures, and ice cream all in one glorious mouthful.

amuse dessert co.'s yuzu meringue tart

If you’re someone who only goes big or goes home when it comes to dessert, welcome to the club. Amuse Dessert Co.’s range of Cakes & Tarts (S$8+) is the perfect place to set up shop, starting with their Yuzu Meringue Tart, bursting with citrusy yuzu notes brighter than the sun it shares an identical colour with. The piquant flavour is then calmly soothed by sweet meringue and a tied together with solid tart shell that held its own without breaking apart.

If Squid Game had a challenge where players had to resist eating this in front of them, I’d lose in three seconds flat.

matcha strawberry cake from amuse dessert co.

A lighter option would be their Strawberry Matcha Shortcake. It’s less dense and rich, instead of boasting of a sweet fluffiness. While generous with their strawberries and cream layers, my main gripe was that the strident sweetness of the berries overshadowed the taste of matcha, which would’ve otherwise been the perfect counterbalance with its earthy notes.

catherine's choux ice cream parfait

Of course, my ‘best for last’ award goes to the Catherine’s Choux Ice Cream Parfait (S$24). It’s named after Queen Catherine, and deservingly so. This parfait is served with two scoops of Truffle Basque Cheesecake and Finca La Amistad Java Chip ice cream, along with freshly baked mini choux pastries, and then topped with delightful swirls of meringue.

This is, perhaps, the dessert of my sweet, sweet dreams. I preferred the Truffle Basque Cheesecake flavour, and am ready to admit that maybe truffle doesn’t just belong only on fries or chips. It elevated the dessert with its light fragrance, and when eaten together with mini choux, made me wish I could live at Amuse Dessert Co. forever. The choux and ice cream combination melted in the mouth with delicate vibrance, despite being an unusual pairing. Fair warning, this will get cloying if you’re trying to conquer it on your own.

When it comes to desserts, sharing is caring… sometimes.
