The vegetarians are not forgotten with the introduction of the Chinese New Year Teochew Vegetarian Set Menu 恭喜发财新年 (S$138++ per pax). The prawns were succulent and fresh, and the sautéed conch had an addictively-chewy texture. The umami goodness of the X.O paired really well with the shimeiji mushrooms, crunchy asparagus and leek.

There’s also the comforting and delectable Xin’s Treasure Duck. A claypot bursting with luxurious ingredients like braised duck, sea cucumber, oysters, fatt choy, Chinese mushrooms and broccoli. Pair this dish with a bowl of white rice, and you get a flawless paragon.

In the core of this lavish yu sheng lies a rich significance: every single one of the 8 snakes forms part of the auspicious Chinese character ‘福’ (fortune), symbolising blessings for the new year. These include 平安 (peace), 喜乐 (joy), 健康 (health), 繁荣 (prosperity), 和睦 (harmony), 财富 (wealth), 贵人 (support), and 吉祥 (good fortune).

Grilled eel ‘snakes’ (known in Mandarin as 蛇鳗) form part of the splendid masterpiece and represent fortune and renewal, while Chef Aaron’s incorporation of flambéed unagi pays homage to the zodiac through taste and artistry. 

Premium ingredients such as rock lobster, abalone, ikura, Hokkaido crispy shredded dried scallop, salmon sashimi, and crispy fish skin complete the ensemble of this vividly beautiful yu sheng. All the ingredients are dressed in extra virgin olive oil and sweet plum sauce.

If you enjoy chilli crab, you’ll be obsessed with the Prawn Toasties (S$19). Imagine crispy, golden-brown buns stuffed with homemade king prawn paste, and dusted with a generous layer of white sesame. For a flawless pairing, dunk the buns into a delicious chilli dipping gravy.

Chinese New Year reunion dinners don’t always need to revolve around Chinese food and set menus. For a modern take that veers away from traditional practices, check out Estuary, a pescatarian haven tucked away at the basement of Palais Rennaisance.

This is the third time that the owners, Chef Polo and Chef Gary, have created a special yu sheng to celebrate the Lunar New Year. For 2025, Estuary’s Yu Sheng (S$68) (available from 24 Jan onwards) consists of 7-day aged hamachi, salmon, ahi tuna, different vegetables drenched in a sauce made of a combination of yuzu puree and salted plum.

To complement your Yu Sheng, feast on their new menu which officially launched on 15 Jan 2025. Feast on the Crispy Scottish Stingray (S$17.80) that’s tossed in a savoury and sweet fish sauce glaze with sesame and lime. For a light and refreshing starter, get the Amberjack Ceviche (S$24.80) complemented by granny smith apple, walnut and celery, much like a waldorf salad.

For a seafood rendition of an Italian approach, the Mackerel Meatball (S$21.80) is drenched in sweet tomato sauce and bits of pork lard. There’s also the Ahi Tuna Carpaccio (S$24.80) paired with strawberry ketchup and nutty butter. Pasta fans can indulge in the Crab Cacio E Pepe (S$26.80) that boasts spaghetti mixed with crab meat, pecorino cheese and black pepper.

When it’s time for mains, pick the 3-Days Dry Aged Lemon Sole (S$38.80) which features a 200g sole doused in seaweed caviar butter sauce, or the 1/2 Spring Chicken (S$38.80) with an 8-hour pork bone broth.

For a sweet and unique end to your meal, try the Aged Comte Cheese (S$17.80) that’s generously drizzled with wild honey and candied pecans.

This Lunar New Year, indulge in their unique homemade Lou Hei (S$58 for small, S$78 for medium, S$88 for large) consisting of fried potato strips, fried yam strips, glass lettuce, carrot, and purple cabbage together with homemade pineapple sauce (available for add-on only).
