She Sells Seashells, a well-known bakery selling madeleines and financiers, has opened its first physical shop at 4 Hillview Rise. Starting out as a home-based business, it is also apparently Singapore’s first madeleines and financiers speciality shop.

Madeleines are French small sponge cakes that have a distinctive shell-like appearance that is acquired from being baked in pans with shell-shaped depressions also known as the madeleine pan. Fun fact: we have a local snack, kueh bahulu, that is said to be inspired by its European counterpart.

Financiers are small almond cakes with an eggshell-like exterior. They usually come in small rectangular loaves and are of French origin. It is said that the name was derived from it resembling a bar of gold.

She Sells Seashells doesn’t just replicate these French pastries, instead they add an exciting spin to them with an array of flavours that changes every month!

Their Signature Matcha Yuzu Madeleines (S$5.20) are a combination of three different types of Marukyu Koyamaen matcha powder. Pieces of sweet and tart yuzu peels are found in the pastry, giving it a refreshing citrus twang. It is also finished with Suntory’s Roku Gin and dusted with matcha powder.

Masala Chai & Varlhona Chocolate Financiers (S$4.80) are a combination of Indian and French flavours. These almond cakes have a good balance of chai spices and decadent Valrhona dark chocolate. The addition of dried figs only adds to the overall texture, creating the best of both worlds.

If you want it all (we don’t blame you), you can opt for their Best Seller Box (S$19.70) that has both madeleines and financiers, such as Black Sesame & Kinako Ganache Financier and Lemon Curd Madeleine.

Do note that She Sells Seashells often sells out fast, so be sure to check their social media pages as well as their Telegram channel to not miss out on these French pastries!
