Amara Singapore‘s Cafe Oriental continues its “Local Legends” series, proudly featuring renowned Chef Damian D’Silva of Rempapa from 2-17 April. This exciting collaboration celebrates Singapore’s culinary heritage, with Chef Damian presenting a special menu at the restaurant known for its reimagined local favourites.

Chef’s Peranakan and Eurasian roots inspire a special lunch and dinner menu, one not to be missed! Exclusively for Amara Singapore, he presents dishes like the rich and ever-popular Ayam Buah Keluak, comforting Eurasian Lamb Dhalcha, refreshing Brinjal Pacheree, fragrant Chi Pow Kai, and flavourful Eurasian Grilled Snapper. Adding a touch of Rempapa’s signature flair, the vibrant Kedondong Salad and a selection of exquisite Kuehs will also be featured.

The Ayam Buah Keluak, a rich and complex Peranakan stew featuring tender chicken braised with the unique, earthy flavours of the buah keluak nut, blew us away. Its dark, savoury gravy was a delightful blend of spices and the distinct bitterness of the fermented nut.

Another standout at our table was the Eurasian Grilled Snapper– an incredibly flavourful dish where fresh snapper is grilled to perfection, bringing out the fish’s natural sweetness. The marinade, a harmonious blend of Asian spices and European influences, was balanced with a tangy kick that beautifully reflected Singapore’s Eurasian heritage. I need this recipe, pronto!

Indulge in Chef Damian’s exclusive creations with sharing set menus for 2 or more: 3 plates at S$60++ per person, or 5 plates at S$70++ per person, both including homemade Acar and a delightful Kueh platter. For those who prefer, these signature dishes are also available individually à la carte.
